REAL FOOD MADE FROM SCRATCHI have been passionately cooking for four decades and it has been a source of joy and peace. I began by watching Julia and Jaques religiously as a youth and just hit the kitchen and cooked and cooked. I have never done it professionally, though I sport an award from the Culinary Institute of America. Doing as a passion versus profession has preserved its role as a source of relaxation.
Over the years I've learned many cuisines. I've baked, pickled, brined, barbecued, cured, made salum and make cheese regularly. I have drifted off into the sterile science of modernist cuisine. I've made Wellington to Pozole. Matzoh balls to Vindaloo. Sushi to Pizza. Through it all I keep coming back to one fact. The best food is whole food made from scratch. It takes love and care and time, but the result is timeless. Here I will try to make real-deal food accessible by breaking it down with meticulous detail. Hopefully you will be inspired to try. |
